酒莊由Ponsot家族在1872年創立, 第四代莊主Laurent Ponsot在1982年開始參與酒莊運作💪(直至2017年). Ponsot其下擁有10多個"特級田"(Grand Cru👑)酒款, 當中包括Clos de la Roche, Chapelle-Chambertin, Griotte-Chambertin, Clos de Vougeot, Corton-Charlemagne, Clos Saint-Denis, Chambertin, Chambertin Clos-de-Beze, Charmes-Chambertin, Montrachet等👍, 連Robert Parker都把Ponsot評為最高級別的5️⃣星酒莊⭐.
在釀造過程中儘量避免添加二氧化硫, 改用氮氣和二氧化碳的惰性氣體來保護葡萄酒👍, 並用上5年以上的舊橡木桶陳釀, 比起使用新橡木桶, 口感帶來更多細緻的變化😋. 另外, 每支Ponsot的label上都有一黃色具有感溫功能的圓形標籤, 當瓶內溫度達到28℃🌡️, 此標誌將轉為橙色, 且無法復原, 這些都展現出Ponsot對酒質的完美要求與執著.
今次的Gevrey-Chambertin酒款以蜜蜂(Abeille)而命名🐝, 葡萄來自一塊位於Chapelle-Chambertin “特級田”附近名叫Les Epointures的地塊(lieu-dit)🍇.
(酒款葡萄比例為100% Pinot Noir, 100%除梗(de-stemmed), 在舊橡木桶中陳釀14個月)
